Food Studies Course Information
Food Studies 101 - 3 credits
Students will learn the basics of cooking and baking by developing skills in the preparation of a variety of foods. Through the students’ choice of recipes they will make quick breads, cookies, cakes, main dishes and desserts.
Baking 201 - 3 credits
Prerequisite: Food Studies 101
Students will expand their baking skills to include: foam cakes, meringues, soufflés, éclairs, fancy pastries and yeast breads.
Baking 301 - 3 credits
Prerequisite: Baking 201
Students will explore the wide variety of fancy international baking. They will have the opportunity to prepare:
- desserts
- chocolates
- tortes
- candy
- Parisienne cream horns
- crème brulees
- advanced yeast breads.
Cooking 201 - 3 credits
Prerequisite: Food Studies 101
Students will improve their meal preparation skills by learning additional techniques to prepare hot and cold food, meat and vegetarian dishes.
Cooking 301 - 3 credits
Prerequisite: Cooking 201
Students will have the opportunity to explore the wide variety of international cuisine.
